My Homemade Carrot Cake with Cream Cheese Frosting

I've been craving for JD Bakeshop's carrot cake for weeks already. Until one day, I decide to bake my own carrot cake! I started searching online for carrot cake recipes and after minutes of baking..here's my finished product! Try to take a look of this yummy recipe!

HOMEMADE CARROT CAKE RECIPE

Ingredients:

4 eggs
(separate egg white and egg yolk)
1 3/4 cups vegetable oil
2 cups white sugar (for this recipe, I used brown sugar)
2 teaspoons vanilla extract (optional)
2 cups all-purpose flour
2 T baking powder
1/2 teaspoon salt
3 cups grated carrots  
2 tsp ground cinnamon
1 cup chopped walnuts (optional)

Cream Cheese Frosting

  • 8 ounces cream cheese
  • 6 tbsp butter, melted
  • 3 cups confectioners sugar
  • 1 1/2 tsp vanilla extract




PROCEDURE:


1.1 Combine flour, ground cinnamon, baking powder, and salt in a mixing bowl than whisk until everything is properly distributed
1.2 Beat the eggs in a separate mixing bowl.
1.3 Add the sugar then continue mixing until fully blended.
1.4 Add the vegetable oil, and vanilla extract then continue mixing until texture becomes smooth.
1.5 Put-in the flour-cinnamon-baking powder-salt mixture then continue mixing using low speed.
1.6 Fold-in the carrots and walnuts
1.7 Pour the batter on a cake pan
1.8 Preheat oven to 350 degrees Fahrenheit and bake the batter for 35 to 50 minutes (you know that the cake is done when toothpick inserted comes out clean)
1.9 Remove from the oven and allow to cool down.







2. Make the frosting
2.1 Beat the cream cheese using an electric mixer
2.2 Add-in the butter and vanilla extract then continue mixing until the mixture is well blended
2.3 Add the confectioners sugar then mix until texture becomes smooth
2.4 Set aside

A Cupcake Buff

I was a major fan of cupcakes ever since different cupcake shows appeared on television. There's DC Cupcakes, Cupcake Wars, and the Cupcake Girls. My all-time favorite show was DC Cupcakes. I really like the sisters owning that cupcake business. Sometimes they would fight or have some misunderstandings, but at the end of the day they're still sisters! Aside from the sisters, what I like about their show is that I could get information or know hows about cupcake. I really enjoy watching the show and sometimes drool over their yummy cupcakes.

Aside from cupcakes shows, I also like reading blogs about cupcakes. My two favorite blogs are Cupcakes take the Cake and The Cupcake Blog. These blogs are very helpful and interesting. I could see lots of cupcakes that are beautifully designed and made with passion.


Getting inspiration from cupcake shows and cupcake blogs, I decided to bake some cupcakes! I have baked 2 kinds of cupcakes. First one is the Red velvet cupcake with cream cheese frosting and the other one is Vanilla cupcake with chocolate ganache. Take a look at my finished products..

This was my first time to bake red velvet cupcakes. I was just so curious about it so, I decided to give it a try. I know that it won't be as perfect as it would be but I was just wondering why it didn't formed a round shape at the top? Maybe there's a lacking ingredient in my cupcake. I got the recipe from my friend and from the internet and the cupcake tastes good! It's worth the try.

The frosting in this cupcake easily melted because I didn't know that the cupcake was still hot. My bad!

I was planning to bake some on my niece's christening so, I decided to place a sample picture on the cupcake to check what  it looks like.

This is just the beginning of something new about my passion for cupcakes. I will be baking more cupcakes soon and experiment with it.
