Maridel's

Maridel's had been opened for a long time already but I haven't got the chance to try one of their mouthwatering cakes. I had seen a lot of photos in social media sites and in blog sites and I can't help but drool over these delightful creations. Good thing my sister and I, together with our friend decided to meet one time. I decided we eat at Maridel's so I could finally taste their cakes! I had seen in a blog site that the Ice cream turtle pie was there bestseller so I had no second thoughts of ordering it right away. My friend ordered the Chocolate chip cookie pie while I ordered for Blueberry Crepe cake that my sister can share with.

Sabor Bisaya Cake Decorating Contest

Last July 2012, there was a cake decorating contest held at Bacolod Pavilion Hotel and my cousin was a  representative of their school. Each school should have 3 representatives that would decorate the cake according to the event's theme which is, "It's more fun in Negros!". Of course the winning entry was my cousin's cake entry. They had the most beautiful decorations that stood among all other schools. The thing that wowed the judges is the smoke coming out from the 2 cylinder at the top of the cake which was an incense stick lighted by my cousin. So here's a photo of their winning design..

How to Make Cake Pops!
























CAKE POPS RECIPE

1 box cake mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.) or royal icing
1 package chocolate bark (regular or white chocolate) or candy melts
wax paper
1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50. You can get even more if you use a mini ice cream scooper, but I like to hand roll them.)
4. Chill for several hours in the freezer.
5. Melt chocolate in microwave per directions on package or through double broiler.
6. Dip lollipop sticks on to melted chocolate and insert into the balls.
7. Roll balls in chocolate and stick on styrofoam block to dry.  (Use a spoon to dip and roll in chocolate and then tap off extra.)
I also only melt a few pieces of chocolate bark at a time because it starts to cool and thicken. It’s easier to work with when it’s hot.

Homemade Banana Cake

It was one of those days again that I started to think of ways on how to make use of the ripe bananas we have at home. Good thing my brother suggested to make banana cake! So, I bought a cake mix and voila there's my banana cake! Wanna take a bite?




HOMEMADE BANANA CAKE RECIPE

Ingredients:

  • Pillsbury cake mix
  • 2 cups mashed ripe bananas
  • 3 eggs
  • 1/3  cup vegetable oil
  • 1 cup water







PROCEDURE:

  • Preheat oven to 180C. Line baking pan with baking sheet or brush with butter or vegetable oil.
  • Mix cake mix with water, oil, and eggs until moistened.
  • Add mashed banana and mix well.
  • Pour in baking pan and cook for 30-40mins or until toothpick inserted comes out clean.
  • Let cool and serve.






REVIEW:
The banana cake I made has just the right taste of banana but if you want to add a cup of  mashed banana then that would be okay. For added flavor, I also planned of adding a pinch of ground cinnamon but too bad I forgot to put some! The cake was soft and there's a little sweetness. The only thing I don't like about it is, that it's dry. I've been wanting to have a moist cake but I usually end up getting it dry! Well this calls for much practice to get that moist cake perfect! ;)

My Homemade Carrot Cake with Cream Cheese Frosting

I've been craving for JD Bakeshop's carrot cake for weeks already. Until one day, I decide to bake my own carrot cake! I started searching online for carrot cake recipes and after minutes of baking..here's my finished product! Try to take a look of this yummy recipe!

HOMEMADE CARROT CAKE RECIPE

Ingredients:

4 eggs
(separate egg white and egg yolk)
1 3/4 cups vegetable oil
2 cups white sugar (for this recipe, I used brown sugar)
2 teaspoons vanilla extract (optional)
2 cups all-purpose flour
2 T baking powder
1/2 teaspoon salt
3 cups grated carrots  
2 tsp ground cinnamon
1 cup chopped walnuts (optional)

Cream Cheese Frosting

  • 8 ounces cream cheese
  • 6 tbsp butter, melted
  • 3 cups confectioners sugar
  • 1 1/2 tsp vanilla extract




PROCEDURE:


1.1 Combine flour, ground cinnamon, baking powder, and salt in a mixing bowl than whisk until everything is properly distributed
1.2 Beat the eggs in a separate mixing bowl.
1.3 Add the sugar then continue mixing until fully blended.
1.4 Add the vegetable oil, and vanilla extract then continue mixing until texture becomes smooth.
1.5 Put-in the flour-cinnamon-baking powder-salt mixture then continue mixing using low speed.
1.6 Fold-in the carrots and walnuts
1.7 Pour the batter on a cake pan
1.8 Preheat oven to 350 degrees Fahrenheit and bake the batter for 35 to 50 minutes (you know that the cake is done when toothpick inserted comes out clean)
1.9 Remove from the oven and allow to cool down.







2. Make the frosting
2.1 Beat the cream cheese using an electric mixer
2.2 Add-in the butter and vanilla extract then continue mixing until the mixture is well blended
2.3 Add the confectioners sugar then mix until texture becomes smooth
2.4 Set aside

CHOCOLATE FREAK!

WHY CHOCOLATE?

 I don't know what's with chocolate but I really find it so addictive. Everytime I eat a chocolate bar or a piece of cake, all I wanna do is eat it all day and never get tired of its addictive taste! I'm definitely such a chocoholic! I would consider chocolate as my life saver! LOL.
Here are some facts about Chocolate.. it is part of a healthy, balanced diet and it makes you feel great! A substance in chocolate called theobromine triggers the release of  "endorphins" which are chemicals produced by the brain that act like a natural ANTIDEPRESSANT and can TEMPORARILY relieve the blues. 

Red Ribbon's Chocolate Fudge cake is one of my favorite comfort food! I just love its moist pound cake layered with luscious fudge filling covered with velvety chocolate icing. It's definitely one of my stress relievers and spirit lifters that makes me feel oh so good! Looking forward to have a bite of this tempting luscious cake! 

Although I still haven't tasted this chocolate heaven cake, I'm sure this would be as yummy as the chocolate fudge cake. Another must try for me! ;)
